2000 Subaru Outback intermittent over heating?

purchased 2000 subaru outback 2.5 limited local subaru dealership. there has been lot of work done far car , have brought 4 times far! has been done mechanically, head gaskets, water pump, timing chain, radiator, (checked fans) thermostat, bled system multiple times , other non-related cooling system. whenever take car on heats within week @ most. last time on heated twice on way home. called me , said cannot react , believe fine. told him "that's said last time , on heated twice within hour." there sending unit goes out prematurely or ecu problems? luckily paid work, not sure if want take car back. suggestions mechanically or other situation?
