What makes cookies brown?


it's 2 things.

first maillard reaction (it's french name, it's pronounced "my yard" final d silent), sugars (from sugar in recipe, , starch in flour) , amino acids (from proteins in eggs , flour) react each other make whole bunch of different compounds.

cookies have lot of sugar, there's caramelization going on. caramelization chemical reaction looks maillard reaction, chemically speaking, different. occurs when heat sugar in dry environment (like oven).

8th grade science class, our project need figure out why cookies turn brown? please asap
